It’s Almost Flip Flop Season!

It is almost flip-flop season and this stuff is amazing.  I kept seeing the infomercial for this on TV and I found it at Bed, Bath and Beyond the other day for just $10.  I have only used it about 4 times, and I can already tell a difference.  It is Heeltastic!



Dinner Tonight! Chili-Beef-Stuffed Zucchini

This was delicious, healthy and easy to make! I substituted ground turkey for the beef.

Chili-Beef-Stuffed Zucchini

INGREDIENTS:
4 zucchini (about 2 pounds), halved lengthwise and seeded
2 tablespoons extra-virgin olive oil
1 onion, finely chopped
3/4 pound ground beef
1 teaspoon ground cumin
Salt and pepper
2 tomatoes, seeded and chopped
1 cup jarred diced jalapeño chiles
One 8-ounce bag Mexican-style shredded cheese

DIRECTIONS:
Preheat the oven to 450°. Arrange the zucchini cut side up in a 9-by-13-inch baking dish. Add 1/2 cup water to the dish, cover with foil and bake until the zucchini begins to soften, about 15 minutes.

Meanwhile, in a medium skillet, heat the olive oil over medium-high heat. Add the onion and cook until softened, about 3 minutes. Add the beef and cumin and cook, breaking the meat up, until just browned, about 4 minutes; season with salt and pepper. Stir in the tomatoes and diced jalapeños.

Uncover the baking dish, pour off the water and season the zucchini with salt. Fill with the beef mixture and sprinkle the cheese on top. Bake, uncovered, until the cheese is melted, about 10 minutes.

I Love My Girls…

This past weekend was girls weekend.  Two of my dear friends Stephanie and Danielle came into town for the weekend from Phoenix.  This is the trouble that we got into…

Friday night started early with lots of Prosecco and dinner at SOUL.  One of my favorite restaurants in Charlotte.  We then proceeded to Whiskey Warehouse and Thomas Street both within walking distance in Plaza Midwood.

Saturday night we went to dinner uptown at BASIL and then headed to BUTTER, the hot new club in Charlotte.  We had VIP table service which was really nice.  The club is amazing.  I felt like I was in Vegas!  We partied there until they kicked us out.

The picture below of everyone passed out on the bus is staged.  We actually took this before going to the club anticipating what we would be like later on that night.  Silly us.  We didn’t pass out on the bus.  We danced all the way home!

…if I don’t say so myself.  I just finished this logo for our wedding photographer – Lisa Crates.  She is giving us a great deal with our wedding package so I gave her some design work!  I love this logo. Might be one of my favorites I have done.

White Beans (drained and rinsed)

+ Chopped Tomatoes

+ Chopped Read Onions

+ Fresh Parsley Leaves

+ A Little Olive Oil

+ S&P

+ Lemon Juice

= Deliciousness!

NYC Wrap Up

Friday morning we got up and headed into the city. Kyle had to be at work at 10. He does some freelance work for Hatch Creative Studio.  This morning they were preparing for a wedding the next day.  Beautiful flowers were everywhere and the loft space had a great view since it was on the 17th floor.  I left him at work and headed down to Chinatown to one of my favorite stores – Pearl River.  And what would NYC be without a celebrity sighting…I saw one of the Real Housewives of NYC, Kelly Bensimon walking into Starbucks.

I met back up with Kyle at the Hatch loft when he was finished.  We headed to Home Depot to pick up some stuff he needed for an event and stopped for a quick bite of lunch at Eeisenberg’s Sandwich Shop.  I love this old NYC diners that have been opened for nearly 100 years.

It was Kyle’s roommate, Cliffton’s birthday and we had planned on doing whatever he wanted that evening.  Luckily, he wanted to go to MOMA for their Free Friday Nights.  I was so excited because I had not been to the new MOMA.  It was packed!  With tickets at normally $20 or so, the free night was quite popular.  The MOMA is one of my favorite museums.  It always has a lot of great art.  When we got there, I told Kyle that I hoped to see a Gustav Klimt piece of art.  He is one of my favorites and I had never seen one of his paintings in person.  As we wandered through the galleries, I turned the corner and there it was! I was so excited!  See me beaming next to it in the photo below…

A ton of great art, some I had seen before but was happy to see again.  One of the main exhibitions was Marina Abramovic:  The Artist is Present.  This artist was spending everyday from March 14–May 31, 2010 (while the museum was open) sitting and staring at which ever museum visitor was sitting across from her.  Pretty crazy.  Also, the Tim Burton exhibit was amazing!

After the MOMA we jumped on the subway to head back to Brooklyn for dinner at Mymoon – Beautiful restaurant and YUM. YUM. YUM.

The next morning I overslept a little and woke up in a hurry to get to the airport.  Goodbye Big Apple.
