Nascar All Star Race

This past Saturday Michael and I went to the Nascar All Star Race here in Charlotte.  We were invited by one of Michael’s clients, who gave us awesome “hot” passes.  As you can see from the pictures below, this gave us access to just about everything!  We were on pit row during the whole race.  It was seriously one of the coolest things I have ever done.

This is the best cocktail shaker in the world.  Seriously.  I was a bartender for 5 years, so I have lots of experience with cocktail contraptions.  Not that this one would work behind a bar, it would be too slow with all of the twisting.  But, for your house – this is the one to have.  No mess!

Michael LOVES popsicles.  He goes through a whole box a week.  I normally buy him the newest flavors and cool superhero pops.  He isn’t picky.  I prefer some sort of ice cream or fudgesicles, but I love these Philly Swirl Stix popsicles….

… especially the Cotton Candy flavor.  And as you can see, they are not that bad for you!



MS Walk 2010

I participated in the MS Walk yesterday.  This is my 4th year walking with the team STEP IT OUT AGAINST MS.  My very good friend, Ben is team captain.  His mother has MS and we all walk and raise money to support his family and help fight this terrible disease.  This year our team has raised over $6,000!  AMAZING!

A Quick Healthy Dinner – Teriyaki Turkey Lettuce Wraps

Need dinner in 20 minutes?  I made this the other night for dinner and it was so easy and so yummy!

1 lb. ground turkey breast

10oz. bag of shredded carrots

5 scallions thinly sliced

1/3 cup teriyaki sauce

1 head iceberg lettuce – leaves separated

In a large skillet, heat 1 tablespoon extra-virgin olive oil over high heat. Add the turkey and cook, breaking up the meat with a spoon, until browned, about 4 minutes. (I use Meat Magic seasoning too).  Stir in the carrots, scallions and 1/4 cup water; lower the heat to medium-low. Cover loosely with foil (or lid) and cook until the water is absorbed and the veggies are soft, about 4 minutes. Stir in the teriyaki sauce to taste and cook until heated through, about 4 minutes. Divide the mixture among the lettuce leaves, about 1/4 cup for each; roll up and serve immediately.

I added a little spicy brown mustard in the wraps which gave it a little kick.  Enjoy!
