Girls Just Wanna Have Fun!

Weekend before last my friend Christine hosted a bachelorette weekend for our friend Jennifer who lives in San Diego.  She flew here to Charlotte for the weekend and so did 2 of her good friends from DC.  We had an absolute blast.  Friday night we just hung out at Christine’s house and Saturday we had pool day!  Saturday night we went out on the town – dinner at Dandelion Market uptown and then to Amos‘ where our friends S.O.Stereo were performing.  Sunday we enjoyed the pool some more.  It was a great girls weekend!



Spiced Chicken with Couscous Salad

I made this for the first time tonight for dinner and it was crazy good and really quick.  I will be keeping this one in my recipe box for sure!

Spiced Chicken with Couscous Salad

Ingredients

  • 3 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (6 ounces each)
  • 1 teaspoon paprika
  • 2 teaspoons ground cumin
  • kosher salt and black pepper
  • 3⁄4 cup couscous
  • 3/4 pound cherry or grape tomatoes, quartered
  • 1/2 cup torn fresh basil
  • 1/2 teaspoon grated lemon zest plus 2 tablespoons fresh lemon juice

Directions

  1. Heat 1 tablespoon of the oil in a large skillet over medium heat. Season the chicken with the paprika, cumin, ½ teaspoon salt, and ¼ teaspoon pepper and cook until golden brown and cooked through, 6 to 7 minutes per side; transfer to plates.
  2. Meanwhile, place the couscous in a large bowl. Add 1 cup hot tap water, cover, and let sit for 5 minutes; fluff with a fork. Add the tomatoes, basil, lemon zest, lemon juice, the remaining 2 tablespoons of oil, ½ teaspoon salt, and ¼ teaspoon pepper and toss to combine.
  3. Slice the chicken and serve with the couscous.

Not really.  But, Michael and I did have one of our engagement photos published in Charlotte’s Premier Bride Magazine a couple of weeks ago.  Our photographer, Lisa Crates sent in some of her photos and one of ours got picked!  You can view the magazine online HERE – we are on page 42.   It is one of my favorite photos!
