Finger Food “Sushi”

I made these at a party I had last week and they were so cute!  Perfect for people like me who do not like actual sushi.

Trim the crusts off Pumpernickel Bread . Flatten with a rolling pin and spread with Cream Cheese . Add sliced Turkey Breast , sliced cucumber and slicedavocado . Roll up. Slice into one-inch segments.

Chicken Crescent Squares

This is Michael’s favorite meal and actually his mom, Lee’s recipe.  These are DELICIOUS and you must try them!

CHICKEN CRESCENT SQUARES

Ingredients:

2 cups of shredded boneless chicken breasts

3-oz package of cream cheese

3 tbsp. butter or margarine, melted

8-oz package of Crescent Rolls

1 tbsp chopped chives

2 tbsp milk

1/2 cup seasoned croutons, crushed

Salt and pepper to taste (I use garlic salt and coarse ground pepper when I bake the chicken, then add a little more to the cream cheese mixture)

Cooking Directions:

Preheat oven to 350 degrees.

Blend 2 tbsp of butter/margarine with cream cheese and add the milk and chives, then add the chicken to create the meat mixture.

Make 4 rectangles out of the crescent rolls, smoothing and pressing the seams together.

Put one fourth of the meat mixture onto the rectangle and bring the four corners together at the top to create the enclosed square.

Brush the remaining butter/margarine on the top of the square, then sprinkle the crushed croutons over the top.

Bake for 20-30 minutes until browned.

NOTE:    I frequently double the recipe so that there are leftovers.  They reheat well.

I went to UNCC art school with Seth Avett.  I saw the Avett Brothers perform a bunch when they were small time here in Charlotte.  I am super excited to see them perform again after so many years – especially in VEGAS!



Bachelorette Party – 80s style

Welcome Back Emmons

Our friends Rod and Danielle just moved back to Charlotte from Phoenix.  They have been quite the movers.  Michael and I went to Dallas/Fort Worth a couple of years ago to visit them.  Rod worked for the Dallas Cowboys and took us to a game in the old stadium – the year before the new mega stadium opened.  We also went to this amazing country bar…quite the cowboy experience.  Michael and I tried to line dance in the moving circle of people dancing around the bar, but we couldn’t keep up.  It was hilarious.  I almost had enough drinks to ride the mechanical bull, but I chickened out at the last minute.  Any who…

We all went out to celebrate their return to Charlotte last weekend 🙂



Baby on the Beach

Last week Michael and I went to Topsail Island for a couple of nights to visit our friends, The Budas on their week long vacation with some of their friends.  Here are a couple of cute pictures I got of Benjamin Buda’s first beach vacation.  The little guy is the cutest!
