Double Layer Chocolate Peanut Butter Pie

I made this for Thanksgiving this year and it was oh so yummy.  You’re welcome.



  • 1/2 (8 ounce) package cream cheese, softened
  • 1 tablespoon white sugar
  • 1 tablespoon cold milk
  • 1 cup peanut butter
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 (9 inch) prepared graham cracker crust
  • 2 (3.9 ounce) packages instant chocolate pudding mix
  • 2 cups cold milk
  • 4 peanut butter cups, cut into 1/2 inch pieces


  1. In a large bowl, mix cream cheese, sugar, 1 tablespoon milk and peanut butter until smooth. Gently stir in 1 1/2 cups of whipped topping. Spread mixture on bottom of pie crust.
  2. In a second bowl, stir pudding mix with 2 cups milk until thick. Immediately stir in remaining whipped topping. Spread mixture over peanut butter layer.
  3. Scatter peanut butter cups over top of pie. Cover and refrigerate for 4 hours.

I absolutely love Halloween photos.  I don’t know what it is about your friends being in ridiculous wigs and outfits, but it is hilarious.  This year Michael and I were “The Birds and The Bees” (he is the giant chicken – it was the best bird costume we could find at the rental store).

I keep a box of costumes that I like to pull out on random occasions during the year…normaly after everyone has had a couple of cocktails.  I guess we all still have fun playing dress up!





Cheesy Goodness

I love Trader Joes.  Last night I discovered a microwavable cheese fondue there.  In 5 minutes flat I had a delicious cheese fondue ready.  I chopped up some green apples, cauliflower and french bread while the fondue was in the microwave.  I absolutely LOVE fondue, but it normally is such a process to make.  YUM-O

This stuff is delicious and so easy to make. Everyone loves it!

Black-Eye Pea Salsa Recipe (Also called Redneck Caviar)

2 (15 ounce) cans black-eyed peas, drained and rinsed
2 (15 ounce) cans white shoepeg corn, drained
1 (10 ounce) can diced rotel tomatoes
12 green onions (chopped)
1 bell pepper (seeded and chopped)
1 jalapeno pepper (seeded and chopped)
1 diced tomato
1 tablespoon minced garlic
1 (14 ounce) bottle zesty Italian dressing
Salt and pepper

Combine all ingredients in large bowl, mix well.
Chill and serve with Frito Scoops or your favorite chips.
